Bubble Tea

Whether you call it BBT or Boba, this is the perfect drink to spill the tea over🧋

Ingredients

Time: 1 Hour
Yield: ~4 drinks

Tapioca Pearls

  • 1/3 cup water

  • 1/4 cup brown sugar

  • 1 cup tapioca starch

  • Optional - few drops of black food colouring if you want your tapioca pearls to be black instead of translucent

  • Optional - simple syrup (equal parts water and sugar)

The TEA

  • 3 Tbsp of your favourite loose leaf tea OR 4 teabags (I like black tea or Earl Gray)

  • 4 cups of boiling water

  • ~1.5 Tbsp of sugar per cup or to taste

  • ~100ml of milk per cup or to taste (You can use any milk alternative e.g. oat, almond, lactose free milk, condense milk)

  • Ice cubes (omit if you want a warm/hot drink)

Let’s get cooking…

Tapioca Pearls

  1. Assemble a bain-marie (also known as a double boiler where you bring a pot of water to boil and place a metal/glass bowl on top. This allows the steam of the water to melt your ingredients)

  2. Pour the water and brown sugar into the bowl and stir until all the sugar has dissolved. Add 1/2 cup of tapioca starch to the liquid and stir until combined. The mixture will become thick and sticky but that’s OK

  3. Turn off the heat and remove the bowl from the pot. Mix in the remaining 1/2 cup of tapioca starch and knead into a dough ball with your hands

  4. Split the ball into 6 pieces and roll out into long snake-like stips with your hand. Cut the strips into small pieces and shape them into spheres using the palms of your hands. The tapioca pearls should be smaller than a marble as they will expand once in the water. If you make them too big at this stage they might not cook through or fit through your straws! I’d recommend going smaller and testing a batch before continuing

  5. In a pot of boiling water, add your tapioca pearls and cook them for 15 minutes at a rolling boil. Turn off the heat and let them sit for 5 minutes

  6. Drain the tapioca pearls and add some simple syrup or freshwater to them to prevent them from sticking as they cool.

The TEA

  1. Steep the teabags or loose leaf tea in 4 cups of boiling water, add sugar to the mixture to dissolve. Let the tea sit in the water until it cools (this can be done overnight)

  2. Divide the cooked tapioca pearls into 4 large glasses, add a few ice cubes to each glass. Pour 1 cup of tea into each glass and add the desired amount of milk to taste

  3. Serve with a large straw OR spoon
